Healthy but Delicious: Gluten-Free, Dairy-Free, Sugar-Free Banana Pancakes!

Spring break is almost coming to an end and I’m sure most of us spend the past two months (or weeks?) religiously working out at the gym or eating healthy. And I bet you’re dying to get your hands on that first slice of chocolate cake or pizza the second you’re back from your sunny spring break destination. But hold on a sec, don’t quit just yet! Who says eating healthy has to be so bland and boring?

These GLUTEN-FREE, DAIRY-FREE, SUGAR-FREE banana pancakes make the perfect meal to satisfy your sweet tooth, keep you energized for the day, and are so yummy that they will actually make you question how healthy they really are!

Ingredients: 

  • 1 ripe banana
  • 2 eggs
  • Cooking spray
  • Pancake toppings of your choice

Directions:

1) Mash the banana using a fork. (Quick Tip: You can use a blender if you like, however make sure you don’t whiz it up too much. We don’t want the mixture to be too runny)

2) Whisk in the eggs

3) Warm a non-stick pan to medium heat, and spray in the cooking oil

4) Dollop the mixture into the pan into small pancakes, and cook for about 30-40 seconds on both sides.

5) Serve with your favorite toppings! I chose Nutella, but if you’re looking for a healthier option you could try honey, agave, or some fruits!
